Hearty Campsite Breakfast Burrito
Ingredients:
- ½ cup diced bell peppers (any color)
- ½ cup diced onion
- 1 medium potato (diced into cubes)
- 2 Tbsp olive or avocado oil
- 4 strips of turkey bacon
- 4 large eggs, whisked
- ½ cup black beans (drained and rinsed)
- 4 large whole wheat tortillas
- 1 cup shredded cheese
- 1 avocado, sliced
- 4 Tbsp salsa
- Salt and pepper, to taste
Directions:
- Before leaving home or in your RV, dice up your bell peppers, onions, and potatoes and place them in reusable containers so they’re ready to go.
- Heat a large skillet over your camping stove or campfire. Add 1 Tbsp of oil and toss in the diced potatoes. Cook for about 10 minutes, stirring occasionally, until they’re golden and crispy. Remove from the skillet and set aside.
- In the same skillet, cook the turkey bacon until crispy (about 5 minutes). Once cooked, chop into bite-sized pieces and set aside.
- Add a little more oil (if needed) and toss in the peppers and onions. Sauté until softened (around 5 minutes).
- Push the veggies to one side and pour in the whisked eggs. Scramble them until cooked through. Then mix them into the vegetables.
- Stir in the black beans, potatoes, and bacon, allowing everything to heat through.
- Warm your tortillas by placing them directly on the skillet for a few seconds per side.
- Assemble your burritos by spooning a quarter of the egg mixture into each tortilla. Top each one with a quarter cup of shredded cheese, avocado slices, and a spoonful of your favorite salsa.
- Wrap it up and enjoy! They can be served right away or wrapped in foil to keep warm or to save for later. They’re easy to reheat over the fire!
