Grilled Breakfast Burritos
Breakfast is the most important meal of the day, especially when you’ve got a busy day of outdoor adventures planned. Make sure you start your day off right with a delicious, protein-filled breakfast that will keep your energy up all day.
Ingredients:

- large flour tortillas
- eggs (approximately 2 per burrito)
- shredded Mexican cheese (1/3 cup per burrito)
- thick-cut bacon (2 strips per burrito)
- canned green Chiles
- hot sauce
- green onions or chives, sliced
- kosher salt and black pepper

- Heat your grill over medium-high heat. Place the bacon on the grill perpendicular to the grates and cook, about 3 minutes per side.
- Beat the eggs in a bowl and season with salt and pepper. In a skillet (on the grill or on a stove), cook the scrambled eggs, stirring often, until almost fully set, about 4 minutes.
- Roughly chop the bacon.
- Assemble the burritos: On each tortilla, sprinkle 1/3 cup of shredded cheese, followed by a portion of eggs, chopped bacon, 1 tablespoon of green Chiles, and a drizzle of hot sauce.
- Fold the sides of the burrito into the center, then roll tightly.
- Grill the burrito, seam side down at first, about 2 minutes per side, until just golden.
- Slice, garnish with the chopped chives or green onions, and serve.
