Grilled Breakfast Burritos

Breakfast is the most important meal of the day, especially when you’ve got a busy day of outdoor adventures planned. Make sure you start your day off right with a delicious, protein-filled breakfast that will keep your energy up all day.

Ingredients:

  • large flour tortillas 
  • eggs (approximately 2 per burrito)
  • shredded Mexican cheese (1/3 cup per burrito)
  • thick-cut bacon (2 strips per burrito)
  • canned green Chiles 
  • hot sauce 
  • green onions or chives, sliced
  • kosher salt and black pepper

  1. Heat your grill over medium-high heat. Place the bacon on the grill perpendicular to the grates and cook, about 3 minutes per side. 
  2. Beat the eggs in a bowl and season with salt and pepper. In a skillet (on the grill or on a stove), cook the scrambled eggs, stirring often, until almost fully set, about 4 minutes. 
  3. Roughly chop the bacon.
  4. Assemble the burritos: On each tortilla, sprinkle 1/3 cup of shredded cheese, followed by a portion of eggs, chopped bacon, 1 tablespoon of green Chiles, and a drizzle of hot sauce. 
  5. Fold the sides of the burrito into the center, then roll tightly.
  6. Grill the burrito, seam side down at first, about 2 minutes per side, until just golden. 
  7. Slice, garnish with the chopped chives or green onions, and serve.
